Taraxacum officinale - Dandelion

Often vilified as being one of the most pesky garden weeds, Dandelion is actually one of the most useful herbs that grows in Canada. Its flowers make a nutritious salad topper and can be made into wine. Its leaves are high in vitamins A and C, as well as minerals like calcium and iron. And its roots act as a potent liver tonic and cleanser.
They say that plants will grow in abundance when most needed. Perhaps the state of our collective livers is why we have so much dandelion around us all the time!
So the next time you go to pick this pesky week, try picking its leaves instead and making them into a delicious bitter salad.
